Egg drop soup has been a favorite of mine since I can even remember. One of my fondest childhood memories is of eating Sunday dinners at the local Chinese Restaurant and dipping fried wonton strips into my egg drop soup.

Are there carbs in eggdrop soup? Yes. Why? Cornstarch. Lots and lots of cornstarch. It’s even in the name. STARCH. It’s practically screaming carbohydrates at you like a curse word. There are carbs in eggdrop soup from restaurants from the cornstarch used as a thickening agent. So what to do in you’re keto and still want to enjoy egg drop soup?
Well, you have two options:
- Enjoy the same great flavor of the restaurant egg drop soup that you know and love but sacrifice the thick texture for a more brothy version
- Thicken your keto egg drop soup with a little bit of xanthan gum instead of cornstarch to enjoy the same texture without the carbs in eggdrop soup.
I love the texture of egg drop soup so I went with the second option. It would make your soup quite as thick and viscous as what you get at the local Chinese restaurant, but it will keep is from being so brothy and “miso-like.” I love a good, brothy soup but when it comes to egg drop soup, I want that familiar texture!
Keto Egg Drop Soup Recipe
- Combine chicken broth, ginger powder, half of the green onions in a large saucepan
- Bring to a boil over medium-high heat then reduce heat to simmer
- Add xanthan gum if desired (a little goes a long way! Start with 1/4 teaspoon)
- Drizzle eggs slowly into the broth mixture while gently stirring clockwise – you can be a rebel if you like and stir counter-clockwise, just make sure you’re stirring in one direction the whole time.
- Add salt and pepper to taste and sprinkle with remaining green onion
This keto egg drop soup recipe can be made easily at home. You can even thicken it if you like without adding carbs! Just use a little xanthan gum. Xanthan gum can be used as a thickener instead of cornstarch if you prefer a thicker texture similar to what you find in restaurants.
