    Easy S’mores Brownies

    These Easy S’mores Brownies are a rich, decadent dessert recipe that’s also incredibly easy to make. Use a box of brownie mix and your favorite toaster pastries to make them. Brownies will never be the same again!

    Easy Smore's Brownies

    I made a batch of these without care that it’s Halloween and we’re overrun with sweets in this house. Moms need treat too right? I love enjoying about half one of these (told you they are rich!) as a treat with my morning coffee

    S’mores Brownies Ingredients

    • 1 box brownie mix (my favorite is Ghirardelli Double Chocolate with Chocolate Chips)
    • 1 egg
    • ⅓ cup oil
    • ¼ cup water
    • 1 box S’mores Pop Tarts
    • 1 cup mini marshamallows

    Directions

    Preheat oven to 325 degrees and spray a pan with cooking spray (oven temp and cook time will depend on pan size and material. Go by the directions on your brownie mix box)

    Prepare brownie mix according to package directions.

    Spread ½ the brownie batter into prepared pan.

    Place Pop Tarts on top of batter. I laid mine out whole and then trimmed some with kitchen shears to fill in around the one edge

    Cook according to package directions based on pan size and type. Undercook them by just a few minutes to keep them from drying out. I guess the dry Pop Tarts absorb some of the liquid during baking because my brownies were done about 5 minutes before the minimum cook time on the package.

    Once the brownies are done, top with mini marshmallows

    Broil for just a couple minutes (seriously, just leave your oven light on and stand there so they don’t burn) and pull them out when they are toasted and brown on top.

    Allow the brownies to cool slightly, then slice into squares. A plastic knife works best for some reason. Not sure why. Sorcery? Science? Coincidence? Just trust me on this one. The marshmallows make it a little more difficult because of the goo factor, but you’ll get a nice slice on your brownies this way.
