    Crock Pot Pork Loin: Get 3 Dinners Out of One Crock Pot Pork Roast!

    Get three different meals out of one pork roast with this Crock Pot pork loin recipe. You can make this Crock Pot pork roast at the beginning of the week and eat like a king for three nights while only cooking once in your slow cooker. Needless to say, this recipe is a huge time-saver. Cook it up on a Monday night and it will get you through hump day without having to cook again!

    Let’s start off with the basic Crock Pot pork loin recipe that you’ll use to make all three meals from your Crock Pot pork roast.
     

    Crock Pot Pork Loin

    Get three different meals out of one pork roast with this Crock Pot pork loin recipe. You can make this Crock Pot pork roast at the beginning of the week and eat like a king for three nights while only cooking once in your slow cooker.

    Ingredients
      

    • 4 lb pork loin The pork roast should be as large as can fit in your crock pot (mine was 3.75lbs in a 3qt. slow cooker)
    • 1 large onion, roughly chopped
    • 1 pkg onion soup mix
    • 1 pkg ranch dressing mix
    • 8 oz broth

    Instructions
     

    •   Place onion on bottom of crock pot.

    • Lay roast on top of onions fat side up. <<< important

    •  Sprinkle with ranch and soup mix.

    • Pour beef broth over the top.
    • Cook on high for 5 hours (you could cook on low all day, but it will fall apart and you want to be able to slice it into steaks)
    •  Remove from crock and let rest at least 5 minutes before slicing.

    Notes

    You can use all the yummy goodness still left in the slow cooker to make gravy. Simply whisk in a mixture of cornstarch and water until the Crock Pot juices are the thickness you like.

    Crock Pot Pork Roast Meal #1  – Pork Loin Steaks

    After the roast has rested, slice ⅓ of it into steak and serve with the gravy you made from the juices left in the Crock Pot (optional)

    After you’ve sliced as many portions as you’d like for steaks, shred the rest of the pork by hand, divide in half, and store in your refrigerator for meals #2 and #3.

    Crock Pot Pork Roast Meal #2 – Shredded Pork Tacos

    Ingredients

    • Corn tortillas
    • Shredded pork from Crock Pot pork loin recipe
    • Lime juice
    • Onion, diced
    • Cilantro, chopped
    • Salsa Verde

    I think assembly is pretty self-explanatory. These are so delicious and honestly my favorite meal of the three. Serve with Spanish rice or refried beans.

    Crock Pot Pork Roast Meal #2 – Pulled Pork Sandwiches

    Ingredients

    • Hamburger or brioche buns
    • Your favorite BBQ sauce to taste
    • Shredded pork from Crock Pot pork loin recipe

    That’s it! Mix pork and bbq together and serve on toasted buns. If you’re feeling especially pressed for time (or lazy like me) serve with chips and call it a day.
