steamed white rice
chilled
⅓
cup
chopped baby carrots
⅓
cup
chopped white onion
½
cup
frozen green peas

coconut oil
divided

sesame oil

Soy sauce to taste
Instructions
Heat a large skillet over medium heat.
Add 1 tablespoon coconut oil
Add carrots, onions, and peas
Cook about 3 minutes or until carrots are tender and peas are thawed.
Push vegetable mixture to the side of the skillet.
Add remaining coconut oil and turn the burner up to medium-high heat.
Add rice and cook until warmed leaving vegetables to the side.
Push rice to the side with the vegetables.
Add 1 tablespoon sesame oil to the small remaining free space in the skillet
Crack
eggs
into the sesame stirring quickly until you have very runny scrambled eggs (see photo)
Thoroughly mix eggs in with rice and vegetables
Stir in soy sauce and remaining sesame oil until heated through

If you really want to save time, use frozen diced carrots and onions.
