Keto Egg Drop Soup

This keto egg drop soup recipe can be made easily at home. You can even thicken it if you like without adding carbs! Just use a little xanthan gum.

Ingredients

  • 4 cups chicken broth
  • 2 green onions
  • ½ teaspoon ginger powder
  • 2 large eggs lightly beaten
  • salt and pepper to taste
  • ¼ teaspoon xanthan gum optional

Instructions

  • Combine chicken broth, ginger powder, half of the green onions in a large saucepan
  • Bring to a boil over medium-high heat then reduce heat to simmer
  • Add xanthan gum if desired
  • Drizzle eggs slowly into the broth mixture while gently stirring clockwise
  • Add salt and pepper to taste and sprinkle with remaining green onion

Notes

Xanthan gum can be used as a thickener instead of cornstarch if you prefer a thicker texture similar to what you find in restaurants. A little goes a long way though so start with just 1/4 teaspoon
