Ingredients
4cupschicken broth
2green onions
½teaspoonginger powder
2large eggslightly beaten
salt and pepper to taste
¼teaspoonxanthan gumoptional
Instructions
Combine chicken broth, ginger powder, half of the green onions in a large saucepan
Bring to a boil over medium-high heat then reduce heat to simmer
Add xanthan gum if desired
Drizzle eggs slowly into the broth mixture while gently stirring clockwise
Add salt and pepper to taste and sprinkle with remaining green onion

Xanthan gum can be used as a thickener instead of cornstarch if you prefer a thicker texture similar to what you find in restaurants. A little goes a long way though so start with just 1/4 teaspoon
