Easy Cucumber Salad with Quinoa

This summer salad couldn't be easier. You'll just need a few ingredients to enjoy this crowd-pleasing cucumber salad recipe.

Ingredients

  • 1 ½ cups cucumber sliced into half moons
  • 1 ½ cups quinoa cooked according to packaged directions and cooled
  • ½ cup red onion diced
  • ¼ cup fresh basil leaves chopped
  • ½ cup zesty Italian dressing

Instructions

  • Toss together cucumber, quinoa, red onion, and basil leaves.
  • Add Italian dressing and mix until combined.
  • Chill before serving.

Notes

Make sure the quinoa isn't hot when you mix it with the rest of the ingredients. Since we aren't using any cheese that could melt, the quinoa doesn't have to be chilled. Just make sure it's room temp or only slightly warm. The cooler the quinoa the faster the cucumber salad will chill in the fridge though.
