Ingredients
3mediumfirm green tomatoes
¼cupcornstarch or potato starch
2eggs
½cupbread crumbsuse GF linked below if needed
½cupground yellow cornmeal*
oil for frying
salt
pepper
Instructions
Slice tomatoes sandwich-style about ¼" thick. Set aside
Blend breadcrumbs, cornmeal, salt, and pepper together on a dinner plate. Set aside
Dredge the sliced tomatoes in cornstarch or potato starch
In a bowl, whisk together two eggs and a teaspoon of water to make an egg wash
Coat tomato slices in egg wash then dredge in breadcrumb mixture.
Fry on each side in an iron skillet over medium to medium-high heat in ½" of vegetable oil
Use tongs to remove tomatoes from the skillet and place on paper towels to drain and cool.
Serve warm with my easy remoulade sauce for dipping and pork belly croutons!

Use medium, firm green tomatoes - Look for firm, green tomatoes that have not yet begun to ripen. You might be able to get away with a tomato that has a little bit of orange on it but is still predominately green. The most important thing is firmness rather than color so if you find one that has a tad of orange on it but still feels as firm as a solid green one, it will be fine.Any starch will work for your initial coating. Cornstarch is what most people have on hand but potato starch or tapioca flour will work too if you need a substitute.You can use gluten-free breadcrumbs if needed for special diets without making any other changes to the recipe technique. Plain or Italian-style breadcrumbs both yield delicious results.Cornmeal MIX is more plentiful on store shelves but you want plain ground yellow cornmeal for this recipe.
