Ingredients:
1 cups flour
1/2 teaspoon salt
1/2 Tablespoon sugar
3 Tablespoon butter
3 Tablespoon lard or shortening
3-4 Tablespoon ice water
1/4 butter, softened or melted
2 Tablespoons sugar
2 Tablespoon cinnamon

Directions:
Preheat oven to 400F
Stir together the flour, salt, sugar and use a fork or pastry cutter to cut in the butter and shortening into the crust dough.
Add enough ice water to make the dough form a ball.
Flour a cutting board and roll out the dough to 1/4″ thickness. Use your favorite cookie cutter to cut into an even number of pie crust “cookies.”
Place the cut pie crust cookies onto a lined cookie sheet and brush the top of each with the melted butter.
Sprinkle the sugar and cinnamon evenly over all tops.
Use a skewer or chopstick to poke 3 holes in each pie crust cookie and then bake 8-10 minutes.
Let the cookie crusts cool before assembling your pie crust gelato cookie sandwiches.
