Peanut Butter Stuffed Cookies

I was able to make these peanut butter stuffed cookies with a toddler at my ankles and a baby on my hip. I’d rate them as pretty easy to make due to that alone! Peanut butter and chocolate lovers, you won’t be disappointed. There just something about the combined flavors of peanut butter and chocolate that knocks my socks off every time I take a bite.

Peanut Butter Stuffed Cookies Recipe

Ingredients
  • 1½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ¼ cup peanut butter
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • ¾ cup sifted powdered sugar
  • ⅓ cup peanut butter
  • 2 tablespoons granulated sugar

Directions

  1. Preheat oven to 350
  2. In a medium bowl stir together flour, cocoa powder, and baking soda. Set aside.
  3. In a large bowl beat together butter, ½c granulated sugar, brown sugar, and ¼c peanut butter.
  4. Add egg, milk, and vanilla. Beat well.
  5. Beat in as much of the flour mixture as possible then stir in the remaining flour mixture.
  6. Form dough into 32¾” balls and place 2″ apart on ungreased cookie sheets. Set aside.
  7. For filling, combine powdered sugar and ½ c peanut butter until smooth.
  8. Slightly flatten each chocolate dough ball and place about a ½ tsp of the peanut butter mixture on top.
  9. Shape the chocolate dough over the peanut butter filling completely covering the filling.
  10. Lightly flatten each dough ball with the bottom of a glass dipped in granulated sugar.
  11. Bake in preheated oven for 8 minutes or until just set. Let stand one minute before transferring to wire racks to cool.
