Cheesy Fiesta Chicken

Why does it seem like getting dinner on the table every night requires an act of God? Oh right. I have two preschoolers and work from home. I used a package of Chicken flavor Knorr Rice Sides to make Cheesy Fiesta Chicken.  If you leave out the cheese and use canned chicken like I did, you’ve got yourself a “pantry meal.” Keep the ingredients on hand for those crazy nights when your fridge is empty, the family is hungry and you don’t have time to visit the grocery store.
